After tasting through the three expressions of the excellent Tequila Avión range at a recent sneak preview, I was looking forward to taking the newly-launched ultra premium brand for a few spins at home. Just in time for National Tequila Day, the Booze Fairy delivered a review bottle of Tequila Avión Silver.

Tequila Avión is the brainchild of partners Ken Austin (former Seagram executive and founding member of Marquis Jet) and Kenny Dichter, Chairman and CEO of Marquis Jet. Distilled from high-elevation, 100% Blue Weber agave, Tequila Avión utilizes an “ultra-slow filtration” process that takes ten times longer than traditional methods. The proprietary techniques result in tequilas of exceptional smoothness, complexity and character.

Tequila Avión Silver

80 proof (40% ABV)

Retail price: $40-50 (750ml)

TASTING NOTES

Color – Clear.

Nose – Very agave-forward, with hints of mint and rosemary.

Palate – Floral and fruity.

Finish – Crisp, clean and smooth.

The bottle was designed by Kevin Shaw (Stranger & Stranger), who found inspiration in the brand’s name (Avión means “airplane” in Spanish and French) as well as the Avión partners’ Marquis Jet company.

On the neck, the tequila’s small batch production is noted by handwritten batch and bottle numbers, as well as the distiller’s name.

A stylized, winged agave heart adorns the body of the bottle.

On either side of the bottle, the embossed words Salida and Llegada (Spanish for “Departure” and “Arrival,” respectively) represent the spirited journey as well as help with holding the bottle while pouring.

With its crisp and balanced flavor profile, Tequila Avión Silver will find a spot in the arsenal of mixologists and home enthusiasts alike. The following margarita recipe, adapted from the Mango Margarita #1 created by Simon Difford in 2004, benefits from the Avión Silver’s upfront agave notes, while the tropical mango and tart lime round out this summertime refresher.

Since its launch in June, the Camarena Taco Truck has crisscrossed Los Angeles, handing out free tequila-infused tacos, tostadas and burritos to eager Angelenos, while spreading the word about Familia Camarena Tequila. In honor of National Tequila Day on Saturday, July 24, Camarena Tequila and Chef Sevan Azarian are sharing his recipe for the public’s favorite Taco Truck menu item, the Camarena Carne Asada Tacos. Who says you can’t have your tequila and eat it too?

CAMARENA CARNE ASADA TACOS
Ingredients:

4 ounces Familia Camarena Reposado Tequila

1 1/2 pounds boneless beef top sirloin, cut into thin bite-size slices

1/2 teaspoon salt

1 teaspoon freshly ground black pepper

Crushed red pepper to taste

1 (28-ounce) can tomatillos

2 fresh jalapeno peppers, seeded

4 tablespoons canola oil, divided

1 (10.5 ounce) can beef broth

1/2 large onion, chopped

1 bunch fresh cilantro, chopped

1 lime

12 (3-inch) corn tortillas

Directions:
Place sliced meat into a shallow bowl, and season with salt, black pepper and crushed red pepper. Pour in Familia Camarena Reposado Tequila, squeeze lime juice over the meat, and turn until evenly coated. Cover, and refrigerate for 30 minutes.

In a blender or food processor, combine tomatillo and jalapeno. Puree for 15 to 20 seconds, or until thick. Heat 1 tablespoon oil in a large skillet over medium high heat. Carefully pour in tomatillo mixture. Cook, stirring frequently, for 5 minutes. Stir in beef broth. Reduce heat, and simmer for 20 to 30 minutes, or until mixture coats a spoon. Transfer mixture to a serving dish.

Heat tablespoon oil in a large skillet over high heat. Stir in 1/3 of the beef, and sauté for 1 minute. Transfer to serving dish. Repeat with remaining beef. Meanwhile, heat tortillas in the oven.

To serve, place two tortillas on top of each other. Add desired amount of meat. Top with tomatillo sauce, onions and cilantro. Garnish with a wedge of lime, to be squeezed over taco before eating.

Recipe Yield: 6 servings.

Camarena Reposado Tequila
For a flavorful and affordable option on National Tequila Day (or any day for that matter), Familia Camarena Reposado Tequila offers a nice balance of agave sweetness and soft spice. The Camarena Reposado is a natural fit for the refreshing Paloma cocktail.

CAMARENA PALOMA

1 oz. Familia Camarena Reposado Tequila

2 oz. grapefruit juice

Seltzer or club soda

Preparation:

Build in a Collins glass.

Garnish with a lime.

This Sunday, July 18, The Wine House presents Tequila Taste Too, an afternoon of agave featuring tastings of dozens of top tequilas, an expanded mezcal section, and cocktails (margaritas, caipirinhas, palomas). To pair with the libations, Executive Chef Todd Barrie will serve guests a variety of Mexican tapas. Tequila Taste Too will take place in Upstairs 2 (The Wine House’s restaurant and wine bar) and Addie’s Place, a smaller banquet room with a separate entrance.

For this year’s event, $10 from every ticket will be donated to the L.A. County Affiliate of Susan G. Komen for the Cure, which raises funds to support local breast cancer services and national breast cancer research programs. According to Mark Schwarz (The Wine House Spirits Buyer), donating to medical research is important to The Wine House, and working with Komen’s L.A. County Affiliate means the funds raised will go to a local charity.

Tickets to Tequila Taste Too are now available online. Capacity is limited, so buying presale tickets is strongly recommended.

Following a February event that NBC’s Joshua Lurie called “a culinary earthquake that has triggered several mobile aftershocks,” the LA Street Food Fest returns with an all-new Summer Tasting Event on Saturday, July 24th at the Rose Bowl.

Event co-founders Shawna Dawson (Sauce LA) and Sonja Rasula (UNIQUE LA) have addressed the crowds and long lines from the February Street Food Fest by capping attendance for the Summer Tasting Event at 5,000 (the Rose Bowl was built to handle crowds in excess of 90,000). Additionally, the all-inclusive tickets will be pre-sale only, and exclusively available online.

Sonja (L) and Shawna (R) bid you welcome.

For the price of one ticket, guests can sample signature bites from over 60 vendors, including gourmet food trucks, Old School carts and stands, celebrity chefs, and street-inspired dishes from some of LA’s best restaurants. Vendors will be serving from tented booths on the field of the world famous Rose Bowl, where attendees can grab a blanket and enjoy their food on the grass, dine at a picnic table or in a shaded lounge, or work on their tan up in the stands.

Summer Tasting vendors will participate in a Cook-Off Competition judged by a panel of experts, led by Susan Feniger (Border Grill, Ciudad, STREET), who says “the single biggest influence on my career as a chef has been street food.”

The Fourth of July has arrived, and that means fireworks, barbecues, picnics, and plenty of drinks to toast our nation’s 234th birthday. Everyone has their own favorites and traditions when they’re celebrating Independence Day, but following are a few cocktail suggestions that are sure to liven up any gathering. And where better to begin than with America’s Native Spirit?

Maker’s Mark is celebrating the holiday with its special Tri-Pack, a trio of 375ml bottles sealed in red, white and blue wax. These packs will be sold for a limited time in select U.S. states with a suggested retail price of $29.99. And to put those patriotic bottles to good use, Maker’s Mark recommends a refreshing Kentucky Lemonade.

Kentucky Lemonade
Makes 1 serving
Ingredients:

1.5 parts Maker’s Mark

0.5 part triple sec

4 parts lemonade

2 parts lemon & lime soda

Directions: Pour Maker’s Mark, triple sec, lemonade and soda into a shaker. Shake and pour over crushed ice.

Not to be outdone is Wild Turkey and its LiberTea recipe, a sweet twist on an old standby that’s perfect for a group. You can make it in advance, the better for you to keep an eye on those burgers and dogs on the grill.

The LiberTea
Makes 1 large pitcher
Ingredients:

4 cups water

4 cups lemonade

4 black tea bags

1 cup fresh basil leaves

0.5 cup Wild Turkey Bourbon

1.5 cups Wild Turkey American Honey

Directions:

In a large saucepan, boil 2 cups water.

Remove from heat; add 4 teabags of black tea. Steep 8 minutes; discard teabags.

Add 2 cups cold water and lemonade; transfer to pitcher and chill.

Add fresh basil leaves. Using a wooden spoon, crush basil until fragrant.

Stir in Wild Turkey Bourbon and American Honey. Serve over ice.

And finally, a few cocktails that salute Old Glory’s Red, White, and Blue.

Strawberry-Basil Martini
Recipe by Jose Zepeda
Makes 1 serving
Ingredients:

3 strawberries, plus 1 thin slice of strawberry for garnish

3 basil leaves

.05 oz. simple syrup

Ice

1 oz. gin

1 oz. vodka

.05 oz. fresh lime juice

Directions:

In a cocktail shaker, muddle the strawberries with the basil leaves and simple syrup.

Add ice and the remaining ingredients and shake well.

Strain into a chilled martini glass and garnish with the strawberry.

Albino Old-Fashioned
Recipe by Tad Carducci
Makes 1 serving
Ingredients:

2 oz. Death’s Door White Whisky

.05 oz. simple syrup

2 brandied cherries

Directions:

Muddle cherries and grapefruit in the bottom of an old-fashioned glass.

Add remaining ingredients and ice and stir until well chilled.

Blueberry Margarita
Recipe by Mark Goyetche
Makes 1 serving
Ingredients:

2 oz. blueberry puree

2 oz. tequila

1.5 oz. orange liqueur

1.5 oz. fresh lime juice

1 teaspoon sugar

Coarse salt for glass rim

Fresh blueberries for garnish

Directions:

In a cocktail shaker, combine blueberry puree, tequila, orange liqueur, lime juice, sugar and ice. Shake thoroughly.

Run a cut lime along the serving glass rim; place glass rim in salt.

Pour shaker contents into glass. Garnish with fresh blueberries. Serve immediately.

Many spirits enthusiasts are on a never-ending quest for a brand that not only becomes a go-to bottle, but one that also embodies a personal concept of distilled perfection.

Many spirits enthusiasts are on a never-ending quest for a brand that not only becomes a go-to bottle, but one that also embodies a personal concept of distilled perfection. However, few have the ambition or resources to actually create that spirit. Ken Austin, a former executive at Seagram and founding member of Marquis Jet, has been looking for his ideal tequila for two decades. “Over the years, close friends and business associates who were also passionate about tequila have joined me in this pursuit,” said Austin. “We came to realize that if we wanted (a tequila that balanced) exceptional taste, character and smoothness, we would have to create it ourselves.” Austin partnered with Kenny Dichter, Chairman and CEO of Marquis Jet, and together they founded Tequila Avión, an ultra premium brand launching today in California and New York.

Last week I had the opportunity to meet with Jenna Fagnan, the recently-appointed President of Tequila Avión and a veteran of the wine and spirits industries. Fagnan’s wealth of experience includes several years as Managing Director of Dom Pérignon. Her enthusiasm for Tequila Avión was readily apparent, and despite the short time window I was able to taste through the Avión range of Silver, Reposado and Añejo expressions.

As she pulled out each of the bottles, Fagnan walked me through the Tequila Avión creation process, which begins with fifth generation growers producing Blue Weber agave, found in the highest elevations of Jalisco, Mexico. The agave plants in this region are renowned for their rich mineral content and distinct quality and character, and as a result are the most coveted for tequila production. The agave is slow-roasted at low temperatures, which produces a richer flavor. For its small batch distillation, Avión uses pot stills with copper coils rather than stainless steel. Avión’s proprietary, “ultra-slow filtration” process (which Fagnan noted takes ten times longer than traditional methods) yields a remarkably smooth tequila, as I’d soon find out.

TASTING NOTES

The Avión Silver is very agave-forward on the nose, with mint and rosemary notes, a floral and fruity palate and a crisp, clean and smooth finish. Its balanced flavor profile should make the Silver a favorite of mixologists and home cocktailians alike.

Aged six months in oak barrels, the Avión Reposado has an initial roasted agave aroma, with cherry and other fruit, as well as floral and herbal notes, on the palate. The finish is long and warm, with an oak smokiness and the subtle sweetness of caramel and vanilla. Like the Silver, the Reposado will also liven up many a cocktail.

The Avión Añejo is aged for two years in American oak casks. The sweet, subtle nose has hints of vanilla and caramel, while a strong roasted agave presence is felt in the palate, and a velvety, lingering finish with fruit and spice. The Añejo is a superb sipping tequila, one that newcomers will find very approachable, while aficionados will appreciate its richness and complexity.

The handsome 750ml bottles were designed by Kevin Shaw (Stranger & Stranger), who has also created the packaging design for Kraken Black Spiced Rum and Solerno Blood Orange Liqueur, among many others. The bottle design takes its cues from the Avión brand name (which means “airplane” in Spanish and French) and also references Marquis Jet. A stylized, winged agave heart adorns the body of the bottle, while on the sides the embossed words Salida and Llegada (Spanish for “Departure” and “Arrival,” respectively) represent the spirited journey as well as help with holding the bottle while pouring. A final design touch is Elevado (“Elevated”) on the bottle stopper, a nod to Avión’s tagline, “Taste Elevated.”

Overall, I found the Tequila Avión range to be an outstanding, strong entry in the ultra premium category. All three expressions are excellent, each with a notable smoothness that should win over those who have previously shied away from tequila. I’m looking forward to exploring Avión more in depth in the near future.

PRICING
Suggested retail prices (which vary by state) are as follows:

Avión Silver – $40-50

Avión Reposado – $45-55

Avión Añejo – $50-60

In California, Tequila Avión is distributed by Young’s Market Company and should be available beginning this holiday weekend.

On Thursday, July 1st, the Hatchi Mix Series returns to Breadbar Century City, featuring guest mixologist Julian Cox (Rivera) and his Tequila in 3 Magical Acts menu of specialty cocktails. Inspired by the popular Hatchi Guest Chef Series, Hatchi Mix invites imbibers to experience the evolution of the cocktail, from the classic era to its cutting edge, through a monthly series of special one night-only menus.
Cox will be mixing eight tequila-centric cocktails in three consecutive acts, inspired by the three courses of a meal and the three sequences of a magical performance. No word yet on whether Cox will pull 400 Rabbits out of a hat.

The “Tequila in 3 Magical Acts” menu features:

To pair with Cox’s libations, Breadbar will serve its new Pizza Mixo menu, featuring crisp pizzas made with its famous bread starter, as well as the full bistro menu.

The Hatchi Mix launch featured “Vive le Cocktail,” a menu of classics from Hatchi Mix curator Devon Espinosa (The Tasting Kitchen).
Following its launch three months ago, Familia Camarena Tequila is taking its brand to the streets of L.A. with the Camarena Taco Truck, making its debut on Wednesday, June 2nd at Recess Eatery in Glendale. This is not your typical food truck: the menu features free Camarena Tequila-infused gourmet tacos, along with other delicious fare.

Familia Camarena Tequila is made from 100 percent blue agave, grown in the Los Altos Highlands region of Jalisco. Produced in Arandas at a family-owned and operated distillery, each bottle is double distilled, as well as bottled, labeled and packaged by hand. The Camarena expressions include a Silver and a Reposado, aged for a minimum of two months in both new and used American oak barrels. Familia Camarena Tequila is currently available only in California and Nevada.

To create the food truck menu, Camarena tapped Chef Sevan Azarian, a Patina Group alum and the owner and chef at Recess.

Recess will be the first of 120 daily stops the Camarena Taco truck will make in June and July. Other locations include the Santa Monica Pier, the Sunset Strip, and the Miracle Mile. Beginning on its launch date, you can get updates on the truck’s whereabouts through a dedicated website, a Facebook page, and of course via Twitter.
