Scorpacciata! at Drago Santa Monica with Paired Cocktails by Chris Hewes

On Monday, June 27th, Drago Santa Monica is hosting a night of scorpacciata, the Italian term for indulging in large amounts of local ingredients while they are in season. This special farm-to-table dinner event will reunite three chefs who previously worked together at Bastide: Drago Executive Chef Evan Gotanda, guest chef Jeremy Strubel (who recently opened Public Kitchen and Bar), and Inner Gardens founder Brandon D’Imperio. The trio is creating an exclusive five-course menu featuring local, sustainable and organic ingredients that showcase the best of the season’s offerings.

Guest mixologist Chris Hewes (Library Bar) is creating the paired cocktails, which will utilize the same local and seasonal ingredients as the dinner menu.

Following is the Scorpacciata! Dinner Menu with Paired Cocktails.

1st course
Tuna Crudo – Lemon misto oil, pickled sultanas, toasted pine nuts, caramelized shallots
Champagne Rocket Cocktail: Arugula, Honey Leaf Syrup, Champagne

2nd course
Beet Caramelle – Chioggia beets and greens, smoked raw milk ricotta, toasted hazelnuts, aged balsamic
Paper Airplanes: Amaro, Gin, Aperol, Lemon, Egg Whites

3rd course
Pan-Seared Branzino – Young fennel puree, crispy baby artichokes, preserved orange, taggiasca olive gremolata
Ultra Violet Lights: Fennel Gin, Basil, Lemon, Agave, Crème de Violette

4th course
Chai Spiced Duck – Seared breast and red wine braised leg, baby parsnips, apricot mustarda, vin santo
The Sterling: Honey Leaf Syrup, Elijah Craig 12 Year Old Bourbon (gin optional), Grapefruit Peel

5th course
Cherry Dolce – Rainier & bing cherries, almonds, olive oil mousse, black pepper ice cream
The Panther: Pink Peppercorn Vodka, Honey, Grapefruit, St. Germain Foam

The Scorpacciata! five-course dinner is $65 per person, with the optional cocktail pairings available for an additional $25. Cocktails will also be offered a la carte for $12 each.
